Our Summer Fun List for 2012

It’s been such a nice spring that we are already thinking about our summer plans. Last year we made a list of things we wanted to do during the summer and it was so much fun we decided to do it again. We kept some things and added new ones. Of course the biggest event of our summer will be welcoming this baby in about 6 weeks!

Costa Rica…full of adventure and relaxation!

We’re back from our week in Costa Rica, which was amazing!  We highly recommend it as a vacation destination to anyone.  Enjoy a few photos from our trip below!

A Birthday at Fogo!

For Dustin’s golden birthday a few days ago the whole family went to Fogo de Chao for lunch! If you’ve never been, and you like meat, you NEED to go! (Even if you don’t like meat, they have a great salad bar.) Fogo de Chao is a Brazilian steakhouse so Gauchos (waiters in funny pants) walk around with delicious meat on swords and slice pieces onto your plate. The whole experience is so fun and different. Needless to say, we were all stuffed by the end of our lunch. The photo is Dustin and Lydia enjoying a beef rib.

Our trip to Colorado

Boulder

At the end of July we took a family road trip to Colorado.  It was a blast!  I had never been to Colorado before, and Dustin had only been there briefly in college.  We absolutely loved it there!  We stayed with Dustin’s cousin’s in Longmont and took day trips to Boulder, Golden, Fort Collins, Denver, and Rocky Mountain National Park.  The whole area was beautiful, the weather was hot but dry, and the food was terrific.  We WILL be back Colorado!

Mmmmm … Strawberries

I took the girls to a local farm to pick strawberries this morning. It was the perfect weather and we got almost 30 pounds of berries!! I plan to make some jam tomorrow and freeze a bunch for smoothies. 20110628-111710.jpg20110628-111721.jpg20110628-111732.jpg

Camping in Taylor’s Falls….take 2

I think I finally got the pictures to work…I hope.

We spent a lovely weekend camping at Interstate state park last weekend.  We borrowed a pop-up camper from my family, the one I used growing up.  We had beautiful weather and spent most of our time hiking around on the rocks and by the waterfall.  Lydia loved hiking and said she wants to do lots more this summer.  While I still don’t think we’re in love with camping, I will say that being in a camper is much better than a tent.  We have a couple more trips planned for the rest of the summer.
